What distinguishes organic coffee from the other varieties is that these coffees are farmed with only natural methods. No chemical pesticides or artificial chemicals are used. The organic coffee farms that we have visited believe that not only this is best method of growing coffee but it is also less expensive. They rely on birds and other wildlife to take care of any pests or bugs. For fertilizer they use natural compost and the volcanic soil which is already rich in nutrients.
There is an organic certification process in place but most of our farmers have achieved this designation not because they do not qualify but because of the added expenses which they cannot afford. They must pay a licensing organization and as one farmer explained to me this is only to verify how they have already been farming for generations.
